Can Coveo be configured to automatically rebuild a sitemap source, so that any changes get picked up without the manual rebuild step in the Coveo Admin Console?

We have a sitemap source, but do not want to have to manually rebuild it, in the Admin Console for every change. Is there a way for Coveo to periodically determine if the Sitemap has changed and rebuild the source if it has?

Of course!

This is called a refresh/rescan/rebuild schedule. Here is the difference between them: https://docs.coveo.com/en/2039/cloud-v2-administrators/refresh-vs-rescan-vs-rebuild

The sitemap sources only support refresh and rescan schedules. When the source is created, it is configured with a default rescan schedule every day at 3AM UTC.

To modify the schedules, follow this documentation: https://docs.coveo.com/en/1933/cloud-v2-administrators/edit-a-source-schedule-sourcename---panel
